Aviyal

Ingredients:

Plantain: 1,
Cucumber/vellarikka: 1
Baby Eggplant: 2
Green Beans: 10
Carrot: 1
Green chillies: 3 split length-wise
Shallots: 5, thinly sliced
Ginger: 1” piece
Garlic: 1 clove, minced
Cumin seeds: ½ tsp
Turmeric powder:1/4 tsp
Chili powder: 1 tsp
Grated coconut: 1 cup
Curry leaves-2 sprigs
Yogurt: 1 cup
Coconut oil & Salt
Method
·        Cut the vegetables lengthwise, about 1 inch piece
·        In a pan with very little water cook carrots and plantain. when its half-way done, add eggplant, green beans, and cucumber and let it cook till veggies are soft
·        In a blender grind grated coconut along with shallots, ginger, garlic, green chili, turmeric powder, chili powder, and cumin seeds to a coarse paste using very little water
·        Add the coconut paste and yogurt into the pan with the veggies and mix well.
·        Check for salt, cover and cook in medium heat for 5 minutes 
·        Add 2 tsp of coconut oil and throw in curry leaves, cover the pan, switch off the flame and let it sit for about 10 minutes
·        Before you serve, mix everything well again and serve hot
